Water Intensity Baselining Methods for Breweries
Water efficiencies in the brewing industry vary greatly based on many variables. Water intensities, or water consumed per unit beer produced or sold, fluctuate among brewers between 10:1 and 3:1.There commonly exists a direct relationship between a brewer’s size and water intensity. Where larger breweries can utilize economies of scale, they are often more resource-efficient than smaller operations and water is no exception. The first step in addressing high intensity within any operation be it pub, micro, regional, or macro is to figure out how much resource is used, where it is used, when is it used, and for what reasons. More concisely, one must baseline water usage.
It is the purpose of this presentation to outline methods for answering these questions at every level of the industry and provide practical guidance for operations with murky capital for addressing water efficiencies as well as those with reduction intentions and a crystal clear budget to back it up.
2:00 – 3:15 PM Panel with Fred Scheer, discussing alternative energies in brewhouse designs with Andy Brewer, Briggs of Burton, Inc. discussing keg racking and operations, and James “Otto” Ottolini, Schlafly Brewing Co.
